Weekend Wrap-Up

Friday
I ran to Kohl's to return a pair of boots that I ordered but didn't like the color and did a little shopping since I was there.  I found a picture to finally complete my wall I had been waiting to do.

Saturday
I worked at the restaurant and then came home and crashed because I didn't sleep very much the night before.  I'm so tired of not being able to sleep at night.  I am so ready to start working days....October 28th will be here soon!!  My friend was having a birthday get together for her husband but I didn't make it because I slept till almost 8pm!

Sunday
I slept in then ran to the mall to check out some fall clothes and still trying to find some new tall boots...I am having no luck at all right now! 
Since it was National Coffee Day, I stopped and got this little treat to enjoy while I did a little shopping.  I found a few cute tops and some skinnies....all I need now are the boots I can't seem to find!  I have an idea in my head and Maurice's has a pair that will work if I don't find anything better.
When I got home I decided to make a new recipe for dinner.  It's called chili tortellini and I got it from pinterest of course.

Just a little treat


This just happened!
Yep, I finally bit the bullet and bought myself an iPad.  I saved my Christmas money and used some of my tax refund to get it...haha, like I'm still a kid!  Well, money used to burn a hole in my pocket when I was a kid so now that I'm an adult I like to think I do better!  HA!!!
I knew I was getting one so when I saw this on clearance last week at Target, I snatched it up quick!!
I worked last night and I'm on call tonight.  I had time to make dinner so I made a pork chop recipe from pinterest {come find me krystal308 }, green beans, mashed potatoes and cornbread!  The green beans and mashed potatoes were good, the pork chops were ok and the cornbread was not good.  I thought it tasted kind of funny so I looked at the date on the box and they were a little past the expiration date....woops!

My Green Monster

Ok, so I tweaked my last recipe a little bit and am much happier with it!!
I posted over the weekend how I had tried one but it was too frothy for me and I wanted to make it a little more dense.  SUCCESS today!!

2 cups of spinach
1/2 cup fruit (I had a frozen mix of peach, mango, strawberries and pineapple, thawed)
vanilla low fat yogurt (the little cup, single serving)
1/2 cup almond milk (I used unsweetened vanilla)
6 ice cubes

 This made about 3 cups and when I put it in SparkPeople recipe calculator it came up with 211 calories!!I told me everything else too!!  I was very happy with the consistency of this and it is sweet enough for me.  Some recipes call for a sweetener of some sort but I did without it this time and it tastes great to me!!

3 Packet Pot Roast for the Crock Pot:1 3lb beef roast, 1 pkg Hidden Valley Ranch Dressing mix,  1 pkg brown gravy mix  1 pkg  Italian dressing mix , 1 cup water - cook on low 6-8 hrs

My role models are my mom, and all 3 of my sisters.  My mom raised me to be a strong independent woman who I hope makes her proud!!  My oldest stepsister Katie has such a great work ethic but still manages to be an awesome Mom and wife, I hope I'm that great one day!  My next oldest sister Michelle has more determination than most people I know who is a great Mom to the greatest girls I know!!  My little sister Lindsay can do no wrong and will always be the baby to everyone, I hope I can be as creative as her one day!!  Love you all!!

Talents, talents.....not so sure what talents I could list here but how about making hair bows, I just recently learned how to do that.

Day 20 ~ A Hobby
My hobbies include blogging, used to be reading, working out when I take the time to go, baking, making hair bows, making cards and watching movies (that's a hobby, right?)

Day 21 ~ A Recipe
This is a recipe I got from my best friend Niki and I'm pretty sure every time I make it and take it somewhere somebody asks me for the recipe.  So here it is:
Niki's Cheeseball
1 package of cream cheese softened
2 cups of shredded cheddar cheese
1 pack of Hidden Valley Ranch Dip mix
Mix the cream cheese and ranch together then add all but about 1/2 cup of the cheese.  Form into a ball and cover with remaining cheese, serve with townhouse crackers!! 
Easy as can be and it's a hit every time!!
